The best recipes are simple, healthy, and delicious, and this 3-ingredient Muesli pancakes recipe checks all three boxes. All you’ll need is bananas, eggs, and the Muesli of your choice. If you don’t have Muesli, you can just use oats. Are you ready to get started?

Step 1: Choose your Muesli
Let’s talk about Muesli for a second (our favorite topic). Muesli is a traditional European-style breakfast cereal made with a mixture of grains, nuts, seeds, and dried fruits. You can think of it as a “happier oatmeal” because it’s more than just oats, or a “healthier granola” because it has all of the yummy granola ingredients without any of the oils or sugars.
If you already have Muesli in your pantry, then you’re ahead of the game. You can just use what you’ve got. In this recipe, we used sport Muesli, but you can really use any flavor according to your own personal taste. Do you want a little strawberry, banana flavor in your pancakes? Step 2: Make sure you have enough bananas and eggs
This recipe makes about eight small pancakes. We consider this the perfect amount for two sporty adults. If you want to make more or less pancakes you’ll have to modify the recipe accordingly. To make eight small pancakes, you’ll need five eggs, two perfectly ripe bananas, and one cup of Muesli.




Step 3: Check to make sure you have everything else you need.
You don’t need much to make these banana pancakes, but there are some items you might find particularly useful, namely a blender (to blend the eggs and banana together) and an electric skillet (so you can cook many pancakes at once). If you have those two items, you are GOLDEN. Without them, however, you can still make it work!
If you don’t have a blender, you can mash your bananas and then use a traditional mixer. You can even use a handheld mixer if you have one of those handy. The last option would be to simply mash everything up by hand. It can be done! I used to do it like that myself. If you don’t have an electric skillet, no worries at all. Simply use a frying pan.
Last, but not least, you’ll need some oil or butter to keep your pancakes from sticking to your pan. In our opinion, coconut oil is best, but you can really use any oil you’d like. Once you know you’ve got everything you need, you can get to work!
Step 4: Break and blend your eggs and bananas
If you’re using a blender/mixer, you’ll simply break your five eggs, break your two bananas, and throw them in. Blend them on high for about a minute. You want the mixture to be completely smooth with no clumps. It may seem quite liquidy (more than normal pancakes). This is complete normal.
Step 5: Transfer to a bowl and stir in your Muesli
Next, you’ll want to pour your batter from your blender to a normal mixing bowl and stir in about one cup of Muesli. If you want your pancakes to be more dense (like bread), you can add more Muesli. We like our pancakes lighter with a stronger banana taste which is why in this recipe, we only use a cup of Muesli.
Once you stir in your Muesli, your batter may still seem rather liquidy. This is completely normal! No need to thicken it with anything.




Step 6: Prepare your skillet or frying pan
Preparing your skillet or frying pan is easy. Just add about 2 Tbsp. of butter or oil (coconut oil is best) to your pan and heat on medium to high heat until hot or melted.
Step 7: Make your 3-ingredient Muesli pancakes!
Here’s the fun part! Pour your batter into your skillet to your liking. We made eight pancakes about 4 to 5 inches in diameter, but you can make them whatever size you’d like. You’ll want to cook them for just 1 to 2 minutes on each side. They should be thin, so they’ll cook rather fast.




Step 8: Serve your Muesli pancakes to your liking
We added some honey, sliced bananas, and blueberries to our pancakes. I wish we had some powdered sugar though, to make them even prettier. That’s an idea for you!

- Blend together eggs and bananas in a blender or mixer until smooth (about a minute).
